We have this moss terrarium inside a maple syrup bottle that has been showing significant growth in the past days. Is this normal? As you can see, they are growing quite tall

When any plant (including moss) gets taller like that, it's an indication that it's not getting enough light. Maybe move it where it's slightly brighter, but not full sun. Moss won't be able to take that.
Some moss, when it flowers, gets tall stalks on it, but I can't tell if that's what's going on here.

That’s so weird because i put it under artificial light for at least 10 hours every day :(
I just hope they’re not grasping for life and are happy instead.

I wondered if the glass used in the bottle has some kind of UV filter in it? Some glass used for food products (think olive oil here) is colored to prevent fading. Maybe there's something like that here, but it's so faint that it appears clear.
The way to test would be to build another terrarium with something you're sure is clear and the plant can survive in it.
