Yes, you can trim this plant (Kalanchoe thyrsiflora) and root the off cut parts - in fact, I recommend it. Otherwise, what you'll get is one long, incredibly tall spike of flowers, which tends to fall over. Trimming it off about halfway will make it bush out, making it compact instead of tall.
